COF-GR-0024The Yellow Icatù variety is cultivated in the newer section of Finca San Antonio, managed by the Boza Family in El Salvador. This urban coffee farm has been in operation since 1970, with a strong focus on sustainable specialty coffee production. They are proud members of the International Women's Coffee Alliance (IWCA). Notably, the Yellow Icatù is the only non-red coffee plant variety grown on the farm. One challenge faced with the Icatú variety was determining when the cherries were ripe since they don't turn red like most coffee cherries. After a few harvests, the Boza Family discovered that the cherries are ripe when they exhibit a banana-like appearance, being yellow with a few dark spots.
