Los Pirineos farm in El Salvador's Usulután department, led by Diego Baraona, specializes in cultivating Pacamara coffee, a variety that constitutes 80% of the farm's production volume. Utilizing a unique Black Honey processing method, ripe Pacamara cherries are pulped, leaving the mucilage intact, and then spread thinly on shaded raised drying beds for approximately 25 days. This meticulous process, tailored to Pacamara's characteristics, results in a distinct flavor profile, showcasing the farm's commitment to quality and innovation in coffee production.
