Jindo Coffee - Celestial Bloom
COF-JD-0004Celestial Bloom offers a delightful bouquet of floral notes, including sweet rose, jasmine, and peach iced tea. It is a Gesha 1931 variety grown at Gesha Village in the Oma block at a minimum altitude of 1931 meters above sea level in Ethiopia (~9°N). This variety, closely related genetically to Panamanian Gesha, undergoes sun-drying with the whole coffee cherry intact on raised African beds covered with parabolic plastic covers for increased airflow. The drying process takes between 18 to 30 days in total. Gesha Village not only excels in producing exceptional coffee flavour profiles but also demonstrates a strong commitment to social and environmental goals. In 2021, Gesha Village High School was inaugurated, marking a significant investment in the local community. The farm also implements practices such as revitalization of native terroir, water recirculation, natural treatment of wastewater, composting, and an apiculture program to promote bees and honey production.
