Jorge Rojas, a fourth-generation coffee grower, meticulously manages Finca El Jardin in Planadas, Tolima, Colombia, employing his own innovative fermentation and drying methods. His process begins with handpicking perfectly ripe coffee cherries, followed by a 72-hour fermentation period in sealed tanks, and then a precise drying process involving multiple stages and careful temperature control. The resulting coffee is characterized by juicy tropical flavors, a bright malic acidity reminiscent of pear, and a light body, reflecting Jorge's dedication to quality and tradition in coffee cultivation.
